I've done some looking around online, seems like changing the pads on my '95 Disco should be no big deal. Just two 12mm bolts holding calipers on, take out one and loosen the other and rotate caliper out of the way and use a c clamp to compress piston.
Am I missing anything?

Those instructions sound like they are for a Series 2 Discovery.

You don't need to remove the calipers to change pads. Pull retaining pins and the pads come straight out.
If you want to turn or replace the rotors, you'll need to pull the caliper and then the hub.
