I'm no expert on the subject but I would do some more research before committing to that tire size. I think you will be needing more than "to trim the front fenders a little" to get those to work on a S1 Disco.
The "experts" at discoweb.org advise the following;
For Disco Series 1
"255/85-16: about 33" tall...very few people have fitted this size. Lots of butchering for this one"
For Disco Series 2
"285/75-16: even taller than 265/75-16, r requires a bit more lift than the regular OME lift. some have fitted OME751 from Discovery series I, and changed SLS sensor in the rear to achieve almost 3 inches. Gearing and shaft strength become issues."
"255/85-16: a bit taller than 285/75-15 but narrower. Gearing and shaft strength become issues. "

Took the Disco to see my cousin at Tire land in north van and did some measurements and yes I will need to do alot of trimming for the 255 so my choices are a 235/85/16 which alot of guys use on there disco's or the 265/75/16, Im opting for the 265/75/16 each tire is about 15lbs heaver than my 245s and and inch wider and 2 inches taller. priced out the BF mudders for $222.00 and the TOYOs for $218.00 so Im going with the TOYO mudders as they have sipes for rain, taxes all in about a grand. I have 5 245/75/16 for sale cheep at the end of the month.

Steering stops
Bump stop height (or body lift).
Possible front fender trimming.
Spare tire will not fit on stock carrier.
Make sure you check at FULL articulation. The fully stuffed wheel is where the interference occurs. Many people think it is OK and then tear the tire apart on the first serious off road trip.

I had to trim the rear fenders for the 245s and I will be trimming the front fenders this weekend, dont need to trim the front bumper area as I have custom bumper, steering stops have already been adjusted by Alister at HESP. I will be Installing the tires at the end of the month and then its time for a gear change to 4:10s.
